Tofu Scramble with Sweet Potatoes

This is a great alternative to eggs if you're wanting to mix up your protein source AND it's so yummy and filling!

Ingredients and Preparation

  • 2 medium sweet potatoes cut in thin rounds

  • 1 medium onion, diced 

  • Bake sweet potato and onion at 350 degrees for 20-25 minutes or until crispy on baking sheet. Sprinkle with a pinch of salt and pepper

  • 8 oz firm tofu scrambled in a frying pan in a tsp coconut oil

  • Sprinkle tofu with 3 tsps tandoori masala spice or curry, depending on what you like!

  • Add 2 tsps garlic powder

  • 2 cups finely chopped kale- add to scramble with a tsp tamari

  • Add baked sweet potato and onion to scramble or serve on the side

 

Serves 2!
