Stuffed Avocados

To me this recipe has always felt kind of fancy (even though its super easy!), so when I'm in a good mood in the morning and I'm feeling like something "different", or I want to impress guests, this is a go to :) You can really stuff the avocado with anything, but here is what I like to use!

Ingredients and Preparation

  • Cut avocado in half and remove pit, place halves onto baking sheet

  • Break an egg into each half

  • Top with scallion slices, mushroom and/or bits of turkey bacon

  • Bake for 15-20 minutes at 450 degrees and serve warm!
