Gluten-Free Applesauce Muffins

I have been off gluten most of my life but I love baked goods, so I have been playing around with this recipe for a lot of years and this is my favorite variation yet! I brought these to a Sunday brunch one time, the whole plate was gone in a matter of minutes! Hopefully you enjoy them too!

Ingredients and Preparation

  • Preheat oven to 350 degrees

  • 2 cups Gluten-free flour

  • 2 eggs

  • 3/4 cup applesauce (homemade is the best if you have it!)

  • 1/2 cup melted butter

  • 1/2 cup honey

  • 1 tsp cinnamon

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • Mix wet and dry ingredients separate and then combine

  • Pour mixture into greased muffin pan

  • Bake for 20 minutes or until toothpick comes out clean

  • Enjoy with a mug of hot cider or tea :)
