Egg and Spinach Breakfast Scramble

I don’t know about you, but I can get pretty tired of eating just plain old eggs, so I've started to add all kinds of yummy things into the frying pan to make breakfast more interesting and delicious. Try adding a different veggie like asparagus or leeks, or add in some ground turkey or salmon. Get creative with the basics!

Ingredients and Preparations

  • 2 eggs

  • 1 cup chopped spinach

  • 1/4 medium white onion cut in slivers

  • 4-6 small round mushrooms cut in slices

  • 5-6 cherry tomatoes cut in halves

  • 1/4 cup grated cheese

  • Sautee mushrooms and onions first until brown

  • Add other veggies and toss together

  • Pour eggs over veggies and scramble

  • Serve on a tortilla or just as is!
